Teeming with brown-green goodness,
Chicken, basil, yum.

For real though, this dish kicks Thai and Chinese fried rice butt all over town, including the Chang restaurants. The difference is in the freshness of the chicken, which is a startlingly common problem at every other Thai restaurant we’ve been to, and in the miraculously deep umami flavors that provide a buttery backdrop for the pungent sweetness of the long-cut green onions, the biting zing of the chili peppers, and the smooth cooling sweetness of the basil. Sometimes the whole thing gets a little too green and stringy, but most of the time it is my perfect upscale comfort food, equally appropriate for a night on the town or lunch the following day.
