Just wanted to clear things up on this commonly misinterpreted dish. It's actually Duck breast with Prunes poached in wine, and sweet potato hash that's cooked in the duck fat from the rendered skin, and spiced with a North African spice blend. The wine reduction/veal stock sauce is infused with the prune poaching liquid thus the black color and deep rich flavor that is mistaken for balsamic.

Huckleberry sauce just might top fig-balsamic, if only because it sounds like it's supposed to go with duck. Maybe it's just the huck-duck rhyme. Regardless, one to add to our hit list. Thanks for the tip!

Had a similar dish at Clifton Inn last night. Perfectly cooked duck breast sliced on top of mashed sweet potatoes topped with a seared slice of controversial-yet-delicious foie gras surrounded by a sweet and tangy huckleberry sauce. Everything worked so well together. You know that perfect bite? Like the one at Thanksgiving that has a bit of turkey and a bit of stuffing that you drag through the gravy and mashed and top with some cranberry sauce. This was kind of like that.

By the way, tonight is the last night the Clifton is offering 50% of their menu. They have been running it for the last few Monday and Tuesday nights. It is a great way to check out what it has to offer.
